Who doesn't love chicken pot pie? I had been craving it for a few weeks and finally decided to try and make it on my own. I blended a few recipes together and then decided to use the crockpot to get that "home cooked" taste. The result? Deliciousness. Enjoy :)
-package of boneless chicken breasts (cubed)
-package of frozen mixed veggies
-can of cream of chicken
-can of chicken broth
-3 potatoes (peeled & cubed)
-1/4 cup half & half
-1 tbsp butter
-onion powder, salt & pepper to taste
-package of refrigerated pillsbury pie crusts
Add the chicken (raw & cubed), veggies, soups, butter & seasonings into crockpot. Cook on high for 5 hours. Add in half & half about 30 minutes before cooking is finished. You will be left with a delicious filling for your pot pie :)
To complete the dinner, preheat oven to 450. Unroll pie crusts and place one over round baking dish (deep is better to hold filling). Add filling and cover with second crust. Cut four slits in top crust and bake for 20-25 minutes. Serves 4.
